Argh, I was there in 2010 and saw no orchids! Next time....

You have to go early in the year, or else the heat will have taken most of them.
I was there in april, 2d to 10th, and in that time the blooming period for most of them was over, it's short due to the heat. There are even some blooming in december.

But Crete is supposed to be the best mediterranean island for orchids and flora, so I suggest you go there instead.
